Vegetable Roll

Serves: 4 Rolls › Preparation time: 25min › Cooking time: 20min .

The combination of whole wheat flour, barley flour and veggies makes the roll fit to keep heart healthy, controls blood pressure, reduces cholesterol and thus reduces obesity by providing ample amount of fibre and very little amount of fat.Also the different veggies present in it contains different types of antioxidants which prevent heart from free radicals. A Perfect snack and whole meal to go through.

Ingredients:

For the Roll:

1/2 cup whole wheat flour

1/4 cup barley flour

1 tsp olive oil

Himalayan pink salt to taste

Whole wheat flour for rolling

For The Stuffing:

1 tsp olive oil

1 cup boiled and chopped beans

1/2 cup chopped and boiled carrot

1/2 cup grated cabbage

½ cup boiled peas

1 tbsp chopped dhaniya

1/4 tsp red chilli powder

Himalayan pink salt to taste

Other Ingredients:

4 tsp tomato ketchup

4 tsp dhaniya chutney

Method:

For the roll:

1. Mix both the flours, oil and salt together in a bowl and knead to make a soft, smooth dough by adding hot water.

2. Keep it aside atleast for half an hour. Knead again.

3. Divide the dough into 4 equal portions and roll out each portion into round roti with the help of a little flour.

4. Heat a tava and cook each roti till brown spots appear on both the sides.

For the stuffing:

1. Heat the oil in a non-stick pan, add the beansand carrots and sauté for 5 minutes.

2. Add the cabbage, peas, coriander, chilli powder and salt and cook for 5 minutes.

3. Divide the stuffing into 4 equal portions and keep aside.

How to prepare the Roll:

1. Place a roti on a clean flat surface, spread a tsp of tomato ketchup and over it a tsp of green chutney and a portion of the stuffing evenly over it.

2. Fold from both the sides it to make a tight roll.

3. Serve immediately.
